THE FARM
Northern Greece
Our farm is located in Northern Greece, in a region supplied by natural mountain spring water.
The choice of this location became the foundation of the entire project. Stable water temperatures throughout the year create exceptionally balanced conditions for sturgeon farming and continuous cultivation.
With only minimal seasonal variation, the fish develop gradually and naturally.
Spring Water
Natural spring water flows directly from the surrounding mountains into our basins.
Its clarity and stability influence every phase of the farm — from the development of the sturgeon to the final character of the caviar.
The entire structure of the farm was designed around these natural conditions.
Hatchery & Juvenile Fish
We raise juvenile sturgeon on our own farm, overseeing the earliest stages of development internally.
Fish of different ages are cultivated across the farm, allowing the full life cycle of the species to remain within our own ecosystem.
This approach provides continuity, consistency, and long-term stability.
Full-Cycle Farming
We raise sturgeon and produce caviar entirely on our own farm.
From breeding and cultivation to harvesting and final preparation, every stage is carried out by our own team.
Our farm includes fish-farming specialists and caviar masters with more than three decades of experience working with traditional caviar methods.
Fresh Production Upon Request
We do not produce caviar for extended storage or maintain large pre-prepared volumes.
Preparation begins once an order is placed. Fish are selected individually at the appropriate stage of maturity, and caviar is prepared fresh shortly before shipment.
This allows the roe to retain its natural texture, structure, and freshness without industrial storage practices.
Traditional Preparation
Each batch is prepared manually according to the desired salt profile and final characteristics of the caviar.
Our caviar masters follow traditional production methods refined through decades of experience, preserving balance, clarity, and consistency in every preparation.
